Japanese Chicken Katsu
Ingredients:
4 skinless and boneless chicken breasts
1 cup of all-purpose flour
1-2 cups of panko bread crumbs
2 eggs beaten
1 cup of vegetable oil or any neutral oil for frying
salt & pepper
Pound chicken breasts & pat dry with a paper towel
set up 3 plates - 1 for flour, 1 for the beaten eggs, and 1 for the panko bread crumbs
place chicken breasts in flour plate and coat entirely with flour
place chicken breasts in beaten egg plate and coat entirely
place chicken in panko bread crumb plate and soak entirely, use a fork to press down the panko bread crumbs on both sides
Heat a pan with vegetable oil and use tongs to place chicken breasts on to heated frying pan
