Harvest Peanut Butter Pistachio Cookies


 Ingredients:

For the buttered Mixed Nuts:

1 cup mixed nuts (cashews, peanuts, almonds, pistachios)

3 tablespoons of unsalted butter


For the Cookie Dough:

2 1/2 cups all purpose flour

1 tablespoon cornstarch

3/4 teaspoon salt

1 teaspoon cinnamon

1 teaspoon baking soda

1 cup dark or light brown sugar

1/2 cup granulated sugar

1 tablespoon vanilla extract

2 sticks of unsalted butter

2 large eggs plus 1 egg yolk at room temperature

small bowl of roasted pumpkin seeds, dried cranberries, and peanut butter morsels optional for decoration
